

I got this recipe for Chocolate Chex mix from my grandson's college math teacher, who, of all people, is a surprising source. When I sampled this amazing treat, it was all I could do to stop snitching more and more decadent bites. It took every ounce of self-discipline I had! It was embarrassing!
I begged her to share the recipe and bought a box of Chocolate Chex on my next trip to the grocery store. Here was my dilemma. I knew if I made it at home, I would eat the whole batch, so the cereal sat in the cupboard until the day I made it for a tailgate party, hoping I would get a little sample and give the rest away!
My plan worked, and it was as delicious as I remembered! She is one of those incredibly special college instructors who takes a personal interest in her students. That day, she was watching some of her students play baseball for the college team and brought snacks. Our grandson was one of the players.

Measure 8 cups of Chocolate Chex into a large microwave-safe bowl and set aside.
Line a rimmed baking pan with wax paper or parchment paper and set it aside, too.
In a small microwave-safe bowl or measuring cup (2-cup capacity or larger), combine the butter, corn syrup, and brown sugar. Microwave on high for 1 to 1½ minutes, until the butter is melted and the sugar mixture is smooth. Stir well.
Pour the hot caramel mixture over the cereal and gently stir until all the pieces are coated.

Pour the Chex onto the rimmed baking sheet covered with wax or parchment paper and spread it out evenly, working quickly before it cools. Let it cool slightly before adding the drizzle.
In a small microwave-safe cup or bowl, melt white baking chips in the microwave on high for 1 to 1½ minutes in thirty-second intervals, stirring until the chips are smooth and completely melted. Drizzle the melted chips evenly over the still-warm Chex mix on the baking sheet.
I thought adding some fall sprinkles while the white chips were still melty would be a fun touch since I was taking the Chex mix to a tailgate. By sharing this way, I knew I would not be tempted to eat the whole batch; it would be easy to do because this Chex mix is addictive!

Once the Chex mix has cooled, break it into bite-sized pieces and place them in a tightly covered bowl for serving or a zipper bag for storage. It will keep well at room temperature, but not for long unless you hide it somewhere!
Chocolate Chex Mix is very easy to make and doesn't require many ingredients. Chocolate Chex is made with rice and real cocoa, so it's a gluten-free treat!
Kids can help make this yummy snack because you don't need to turn on a stove or oven; it's made entirely in the microwave!
You can customize it with chopped peanuts, sprinkles, or by melting another flavor of baking chip, such as peanut butter, butterscotch, cinnamon, or dark chocolate.
