Canning is a process of vacuum sealing food using high heat or pressure cooking. Green beans, tomatoes and fruit are some popular foods to can but creative cooks do so much more. Canned meats are tender, flavorful and a great time saver. Just open a jar, thicken the juice and you have a main dish. Soups, sauces, pickles, preserves along with jellies, jams and fruit butters are a great way to preserve the summer bounty. Wonderful to have on hand and they always make a coveted gift.
