If my husband comes home extra tired or has had a tough day, this always makes him feel better. When he walks in and smells it cooking, his crummy mood immediately begins to evaporate. Some nights, when I sense he's a little down, I do a quick change up on the menu and make him some scalloped corn! Maybe it's the corn or maybe it just makes him feel loved. But it works!
It's crazy quick to make using things that you probably have on hand. I often serve this as the "starch" part of a balanced meal. It's cheap and easy comfort food and takes less time than potatoes, rice, or noodles. And, it pairs well with almost everything from hot dogs to steak.
Our girls grew up on it on the farm. Have I mentioned how adorable they were? Those two were always putting on shows for us. That's their faithful old dog Lady in the bottom right corner. She always stuck close to the girls wherever they were playing. She was such a good old dog.
Forgive the trip down memory lane. Back to the corn.
Simple microwave recipe for scalloped corn. Fast, economical, and easy, ready in minutes. This is an old family favorite. Sunday dinner was just not complete without this dish.
Crush crackers coarsely- just use your hands. Add milk and egg, Mash with fork until cracker crumbs are well moistened. Add corn and other ingredients. Put in a sprayed microwavable dish.
Cover loosely with plastic film. Microwave for 5 minutes. Remove from oven, stir well and microwave about another 5 minutes. Since microwave ovens vary, you may need to adjust cooking time. The consistency should be like oatmeal. It will firm up a little after you take it out.
Dot with additional butter, paprika and parsley if desired. Picture shows snipped chives as garnish.
This is very adaptable and easily doubled. Your family might enjoy the addition of some green chilies, minced onion, bacon bits, or red pepper flakes. Another good garnish could be french fried onions, the kind you put on green bean casserole.
Spray a casserole dish that can go in the microwave and throw this together in a jiffy.
