At our house, if everyone could choose just one cookie for Christmas, it would be a huge plate of chocolate covered Ritz peanut butter crackers. This easy, no-bake tidbit covers it all: sweet, salty, crunchy, and chocolatey. For us, peanut butter and chocolate are the holy grail of Christmas deliciousness.
Peanut butter and chocolate are some of their most well-loved flavor combinations ever! A cookie or treat containing chocolate and peanut butter is at the top of the favorites list for almost everyone. It’s a fantastic combination; who can deny it? But do you ever wonder why?
Our busy little tastebuds love it when we eat foods with contrasting flavors and textures. These yummy chocolate covered Ritz goodies make our tastebuds sing and dance!
They love the classic sweet/salty, crisp, and crunchy combination and the added creaminess of the thick coating of chocolate! Add some holiday sprinkles, and you up the game with more crackle and texture.
Begin by covering a large, rimmed baking sheet with waxed or parchment paper. If you have trouble getting the paper to lay flat, spray the baking pan with a little non-stick spray and pat the paper in place. Lay out Ritz crackers, flat side up, in rows like little soldiers.
Use a table knife to spread creamy peanut butter on each cracker. I always choose Jif peanut butter! Use two to three teaspoons of peanut butter; no one wants a skimpy peanut butter middle! Now, put a second cracker on top with the flat side down on top of the peanut butter, and you are ready to dip.
You can use chocolate chips, candy melts, or almond bark for dipping. I found a handy product at Walmart that included a disposable microwavable tray for melting the chocolate almond bark. It worked well, and I just tossed it in the trash when I was done.
You can also use a double boiler to melt the chocolate and keep it warm while dipping. I do not have a double boiler, so another time, I put an oven-proof glass bowl on top of a saucepan with some water in it. It must be an oven-proof bowl, and the water shouldn’t boil but simmer.
There does not need to be enough water in the pot to touch the bottom of the bowl. As the water simmers, it generates enough gentle heat to melt the chocolate. If you use chocolate chips, a small amount of shortening will help the chips achieve a perfectly melty consistency.
I used a fork to plop each cookie into the melted chocolate, roll it, and set it on my parchment-covered cookie sheet to harden. I’m sure wax paper would work well on your pan, too.
Before the chocolate hardened, I added some holiday sprinkles for a festive touch. You might try sprinkling flaky salt on the cookies to enhance the sweet/salty flavor. Yum!
Another idea would be to melt some white chocolate or peanut butter chips in a baggie and snip off a corner to drizzle on cute contrasting stripes after they have had time to set up.
I think garnishes elevate the appearance of chocolate covered Ritz peanut butter crackers, but believe me, these taste fabulous, even unadorned!
As I was spreading peanut butter on the crackers, it dawned on me that if I was in a big pinch for time, I could use Ritz’s Peanut Butter Crackers that already have peanut butter inside.
We always have them on hand! We love them, and while there would not be as much peanut butter inside, it would be a huge time saver! I suggested the idea to my kids, and they said, "Not enough peanut butter!"
Ritz also makes a mini version of peanut butter-filled crackers called Ritz Bits, and they would be incredibly tasty dipped in chocolate! This treat is amazing, big or small, pre-packaged, or you when you spread the peanut butter on them yourself!
Use marshmallow cream or fluffernutter instead of peanut butter inside the Ritz Crackers. And don’t limit yourself to chocolate coating! You can also use vanilla almond bark, baking chips, dark chocolate, or peanut butter chips.
