It's ready for the oven in just minutes

And here’s the beautiful part: it’s a quick bread, so there’s no yeast, kneading, or waiting for dough to rise. You probably already have everything you need in your kitchen.

The recipe makes two full-size loaves or several adorable mini loaves. It freezes beautifully, too, so you can keep one and tuck the other away for company, gifting, or a future cinnamon emergency.

This cinnamon bread is outrageously good—the kind you slice “just to taste,” then somehow find yourself standing at the counter eating a second piece. It’s soft, moist, warmly spiced, and filled with that irresistible cinnamon-sugar flavor that makes the whole house smell amazing!

My good friend gave me these little ceramic pans many years ago, and I love how they bake and how easily they clean up. I can even pop them in the dishwasher! I hope Santa puts another set of mini ceramic baking pans under the Christmas tree for me this year so I can bake lots of little loaves at once! I've been very good, I promise!

Let's Bake Some Easy Cinnamon Bread Right Now

This is a simple one-bowl batter because I learned long ago that a second mixing bowl doesn’t make the bread taste any better!

In a large bowl, beat the eggs, milk, melted butter, oil, vanilla, and butter flavoring until everything is well blended. Add the flour, sugar, salt, and baking powder, then whisk until the dry ingredients are completely incorporated. Mix only until the batter is smooth and combined—quick breads are most tender when they aren’t overmixed.

Lots of people have asked me about butter flavoring, also called butter extract. In my opinion, it’s a little bit of magic in a bottle! I often add it to cakes and quick breads when I want even more buttery flavor.

Butter tastes wonderful, but it contains about 18 percent water, which evaporates during baking. Oil contains no water, so it helps baked goods stay moist longer. By using butter, oil, and butter flavoring in this cinnamon bread, we get the best of all three!

Divide the batter evenly between the prepared pans, filling each about two-thirds full. Sprinkle half of the cinnamon-sugar mixture over each loaf. Use a knife to gently swirl some of it into the batter, leaving most of that delicious cinnamon sugar on top.

Bake standard-size loaves for about 45 to 50 minutes, or until they are beautifully golden brown and a cake tester inserted into the center comes out clean.

Mini loaves will bake much faster. Depending on the size of your pans, they usually take about 25 to 35 minutes. Begin checking them at 25 minutes and keep a close eye on them toward the end of the baking time—they can go from perfectly baked to overdone in a hurry!

Cinnamon Bread Makes Great Gifts!

A quick and easy recipe for two delightful loaves of cinnamon bread using ingredients you probably have on hand! Ready for the oven in about five minutes!

Prep Time 5 minutes
Cook Time 50 minutes
Total Time 55 minutes

Ingredients

  • 2 cups granulated sugar
  • 4 cups all-purpose flour
  • 6 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 2 cups milk
  • ⅔ cup vegetable oil
  • 1 tsp butter flavoring
  • 1 tsp vanilla

Cinnamon Topping

  • 3/4 cup granulated sugar
  • 4 tsp cinnamon, or more to taste

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease or spray the loaf pans.
  3. Whisk the dry ingredients: 2 cups of sugar, 4 cups of flour, plus salt and baking powder in a bowl and set aside.
  4. Combine the sugar and cinnamon for the topping and set aside.
  5. Combine the milk, eggs, oil, vanilla, and butter flavoring in a large mixing bowl and beat until well-blended.
  6. Gradually add the dry ingredients to the egg/milk mixture and beat until evenly moist; do not overbeat.
  7. Fill two standard loaf pans about 2/3 full of batter.
  8. Sprinkle half of the cinnamon sugar over each loaf and use a knife to swirl the cinnamon sugar partially into the batter, but leave most of it on top.
  9. Bake for 50 minutes or until golden brown. A cake tester should come out clean when inserted near the center of the loaf.
  10. Cool the loaves before removing them from the pans.
  11. Wrap tightly in heavy-duty aluminum foil for freezing.

Notes

Smaller loaves can bake at the same temperature but will take less time to bake. Mini loaves about 22 minutes, small loaves, about 30 minutes, but check by using a toothpick or cake tester; it should come out clean.

Why Cinnamon Is The Aroma Of Fall And Winter

Certain smells always remind us of the onset of autumn, with shorter days, cooler nights, and more time spent inside. It seems like we just turned the calendar to Septmeber, and while it's still warm and sunny where we live, soon we'll turn on our heater to chase the morning chill and put on a sweater for our evening walk.

When the fall weather comes, the scent of cinnamon, the warm spices of a bowl of chili, or a cup of spiced cider are smells we associate with the changing weather. We like to get cozy and begin to change how we eat, and suddenly, some comforting soup sounds amazing.

Fall is the favorite season for thirty-three percent of Americans! There are lots of fun statistics about our favorite things about fall in this article from 2020.

That's why this easy cinnamon bread seemed like such a good idea, even though it is about 85 degrees on this September day in Nebraska!

    1. hey Mary, did you get my email? You can leave our butter flavorong and it won't affect the flavor a lot- but if you get some, I think you'll be happy with the flavor boost it gives cookies, quickbreads, and muffins!

  1. These baby bread pans are drop-dead adorable! What a nice friend you have. I love the smell of cinnamon so this recipe will definitely make an appearance soon. It says that butter flavoring is available at HyVee and we have one nearby. I have some shopping to do on Thursday so I'll pick some up in my travels. Have a nice week...
