I often get a wild idea that I want to make a recipe right now, so I have come up with a game. I've learned to play what I call "pantry roulette." Huh? I look at what I have on hand in the cupboard and fridge and decide if I can pull some switcheroos and still have a good result!

One time I didn't have any Rotel (I usually don't because I was "born to be mild") so, I subbed some mild salsa, and I liked it even better. If you have a "mixed marriage" and one partner likes it hot 😉 , you can always offer some sliced jalapenos on top or hot sauce on the side.

No refried beans? Mash some pinto beans, black beans, navy beans, or even white kidney beans.

That's it, folks- all you need to make an appetizer that will delight the family and your guests!

Combine all the ingredients in a medium bowl: the beans, the Rotel, and half the cheese.

Stir it up and put it in a ten-inch skillet you have lightly greased- I used some bacon drippings because, well, it couldn't hurt the flavor, right? Now sprinkle the rest of the cheese over the top to brown and get gorgeous in a 350-degree oven for about 20 minutes.

Pull that gorgeous dip out of the oven and put it on a protected surface surrounded by a sea of tortilla chips (or Fritos, or scoops or your favorite dipper) for dipping, then watch it disappear! Hurry and get a bite or two of this amazing bean dip before your guests devour it!

This bean dip would also be great stuffed inside a burrito or spooned over nachos! For a heartier version, add browned hamburger or chorizo! Yum!

Ingredients

  • One 16-ounce can of refried beans
  • One 10-ounce can of Rotel
  • 2 cups grated cheddar cheese
  • Chips or dippers for serving.

Instructions

  1. Preheat the oven to 350 degrees and lightly grease a 10" cast iron skillet or other oven-safe baking dish.
  2. In a medium bowl, Mix refried beans, Rotel, and half the cheese. Stir together well.
  3. Put the mixture in the baking dish or skillet and top with the remaining cheese.
  4. Bake for 20 minutes, or until hot, bubbly, and the cheese has begun to brown.
  5. Serve hot with chips or dippers of your choice.
