How To Make Festive Cornflakes Cookies

Crunchy Delicious And Gluten-Free

I was ecstatic when I found an idea for making these yummy and speedy cornflakes cookies and dressing them up for the holidays! As I have told you repeatedly, I'm always looking for a fast way to do things. I wish I could slow my jackrabbit brain down. Do you think Santa could help?

They are gluten-free, which is a bonus because it's finals week, and our granddaughter could use a gluten-free treat to get her through the end of the semester! How can you go wrong with a cookie with butterscotch, chocolate chips, peanut butter, and Nutella, topped with a Hershey's Hug? No way!

These cookies are no-bake! That's a bonus in my book because that means they are fast and easy and something the kids or grandkids can help you make! I've found that clever little hands are great at unwrapping Hugs! (but expect losses. 😉)

How To Make Festive Cornflakes Cookies

Seriously, the step that takes the longest is unwrapping the Hugs candies! It's also the step most likely to tempt you to pop some in your mouth along the way!

I wanted to include some of Julia's favorite flavors, so I used chocolate chips, butterscotch chips, peanut butter, and Nutella! I put them all in a microwave-safe large bowl, along with a bit of unsalted butter, and grabbed a silicone spatula to stir it!

Measure five cups of cornflakes into a container and set it aside for now. Microwave the chips, peanut butter, and butter in thirty-second bursts, stirring between intervals. It only took me three intervals in the microwave until the mixture blended, melted, and smooth as silk. (Oh dear, I took the picture before I added the Nutella, oops!)

While that's happening in the microwave, cover rimmed baking pans with parchment or wax paper, or do as I did here. I rolled out my favorite Reynolds wax paper directly on top of my kitchen island.

Now pour the cornflakes into the bowl with all the melty goodies and stir until all the cornflakes are completely coated with the chocolatey mixture. Use a tablespoon or a cookie scoop that holds about a tablespoon to scoop the crunchy mixture into mounds and top each one with a Hug as you go.

I had better luck making nice-looking mounds if I crushed the cornflakes a little as I went along. They're still nice and crunchy; they're just a little bit more cooperative!

Your festive cornflakes cookies will need to sit for an hour or so until they are set before you can pick them up and move them neatly. A little time in the refrigerator can help speed up the process!

I suggest storing these cookies in the refrigerator in a tightly sealed container with wax paper between the layers. You can freeze them, too! They will be good for three months or more in the freezer if they last that long!

This is an easy no-bake cookie using cornflakes, so they're gluten-free! Top each chocolatey cookie with a Hershey's Hug for the cutest touch!

Ingredients

  • 5 cups cornflakes
  • One cup of semi-sweet or dark chocolate chips
  • 1 1/2 cups of butterscotch chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup Nutella or other Hazelnut spread
  • 2 Tbsp unsalted butter

Instructions

  1. Measure the cornflakes and set aside.
  2. Cover rimmed baking sheets with wax or parchment paper.
  3. Unwrap the Hugs candies and set them aside.
  4. Put the chips, peanut butter, Nutella, and butter in a large microwave-safe bowl.
  5. Microwave the chips, Nutella, and butter, for 30 seconds at a time, stirring in between, until all are melted, smooth, and combined.
  6. Pour the cornflakes into the chocolatey mixture and stir until all the cornflakes are evenly coated.
  7. Use a small cookie scoop or tablespoon to make mounds on the prepared baking sheet.
  8. It is helpful to crush the cornflakes a little bit as you scoop up the mixture to make the mounds stick together better.
  9. Put a Hershey's Hug on top of each cookie as you go.
  10. Allow the cookies to set up before you pick them up. You can put the pans in the refrigerator to firm up more quickly.
  11. These are fine at room temperature, but I suggest storing them in the refrigerator in a tightly sealed container with wax or parchment paper between the layers.
  12. These cookies freeze well for three months or more when tightly wrapped in a tightly sealed container.

You can substitute peanut butter chips for the butterscotch chips if you like! You can also put a different candy on top if you prefer. Ideas might be a Rolo, a peanut or almond M&M, or a chocolate kiss! Make them the way you like!

I haven't heard from our granddaughter yet, but I hope she likes them as much as her momma does! You might also want to try these amazing Sugar Cookie Bars! All of the flavor and much less effort! Or for your adult parties, why not make some Amaretto Booze Balls?
