Chicken and biscuit pot pie casserole is everything you love about classic pot pie, but so much easier! Tender chicken, vegetables, and a creamy sauce hide under golden biscuit bites that puff up as they bake. It’s cozy comfort food your whole family will ask for again and again.

When I took this chicken and biscuit pot pie casserole to our daughter’s family for dinner, it was a massive hit! With two active, hungry teenagers, they polished it off in one sitting. Safe to say they’ll be making it again soon.

I wasn’t sure Papa would be sold (he’s not much of a chicken guy), but I made us a smaller chicken and biscuit pot pie casserole too — and he loved it! That’s when I knew this was a keeper.

This easy, cheesy dish is pure comfort food. Tender chicken, colorful veggies, creamy sauce, and golden biscuits make it impossible to go wrong. You can even use rotisserie chicken to make it extra quick!

I tried hard to determine who created the first bubble-up chicken and biscuit casseroles, but I couldn't track it down. However, I have a sneaking suspicion it could have been Pillsbury. The rascals might have figured out how to sell lots more biscuits! Here are a few more bubble-up recipes from them to get you started!

Chicken and Biscuit Pot Pie Casserole Is Quick And Easy

I thought life would slow down a bit when I retired, but it shows no signs of that happening yet! Life has a funny way of filling in the blanks we thought we had in our “schedules.” I had to make this casserole for the kids in a hurry!

One of the most awesome things about this dish is that it comes together fast with easy-to-find ingredients. I bought skinless, boneless chicken breast and prepared it in my Instant Pot. I dumped the chicken in the Instant Pot with some water and Better Than Bouillon roasted chicken base, and about 12 minutes later, I had tender, moist, shreddable chicken. (That doesn't count the time it takes to let the pressure drop, but you can quick-release it if needed.)

Kids Will Love Chicken And Biscuit Pot Pie Casserole

Once I had shredded the chicken, I put it in a 13-inch by 9-inch baking pan I had treated with non-stick spray. Next, I combined the soup, sour cream, shredded cheese, mixed vegetables, garlic powder, and seasoned salt in a mixing bowl.

Once everything was well combined, I spread the mixture over the shredded chicken. Finally, I cut the refrigerated biscuits from two 6-ounce cans into fourths and scattered the pieces over the entire casserole, pressing them in place as I went along.

This bubble-up chicken and biscuit pot pie casserole bakes for about 35-45 minutes in a 375-degree oven, and when you pull it out, you have a complete meal! What more would you need to add? Tender chicken, colorful vegetables, cheesy, good sauce, and crisp little biscuit bites on top! What a great meal in one pan!

Every Busy Mama Needs A Few One-Pot Wonders

Our lives are busy! After working, taxiing kids around, doing laundry, and running errands, a simple-to-fix dinner with very few dishes to wash looks like a dream come true! You need this bubble-up chicken pot pie casserole in your go-to recipes, and fast! One-pot meals are called “one-pot wonders,” with good reason! A few of my favorite go-to one-pot wonders are American Goulash, Speedy Scalloped Potatoes With Ham, and Hamburger Noodle Hotdish!

This delicious, kid-friendly, and man-pleasing chicken pot pie casserole comes together quickly. Then, you top the whole thing with biscuit dough cut into small pieces and let it bake until the biscuits “bubble up.”

You know the biscuits are perfectly flaky inside when they are golden brown. The biscuits are the best part! Dig them out with your fork or fingers and pop them in your mouth! Yum!

P.S. While you’ve got the oven on, stir up a pan of Busy Day Lemon Bars, a perfect ending to a wonderful family meal!

Chicken and Biscuit Pot Pie Casserole

A quick and easy biscuit-topped casserole that's a lot like a chicken pot pie but much easier and faster and fewer dishes to wash.

Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes

Ingredients

  • 2 cups of cooked, shredded chicken**
  • 1 15.25-ounce can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups frozen mixed vegetables
  • 1 tsp garlic powder
  • 1/2 tsp seasoned salt, optional
  • 1/2 tsp pepper, or to taste.
  • 2 6-ounce cans refrigerated biscuits
  • parsley for garnish, optional

Instructions

  1. Spread the shredded chicken in a greased nine-inch by thirteen-inch casserole dish.
  2. Combine the soup, cheese, sour cream, frozen vegetables, garlic powder, salt, and pepper in a mixing bowl and mix until well combined.
  3. Spoon the soup mixture evenly over the shredded chicken.
  4. Cut each biscuit into four pieces and distribute evenly over the casserole, pressing each piece into the casserole as you go.
  5. Sprinkle with parsley for a pretty garnish.
  6. Bake at 375°F for 35 to 45 minutes, or until the biscuits turn golden brown.

Notes

** i made mine by putting boneless, skinless chicken breast with a cup of water and a heaping tablespoon of Better Than Bouillon roasted chicke base in my Instant pot and pressure cooked it on high for about 12 minutes.
