The pastel sprinkles are baked right into the bars and lavished on top of the thick buttercream icing. We love the wee bit of crunch the sprinkles add when you eat them, and they look so happy on a plate!

I have a hard time staying away from them and try to limit myself to one or two a day, so I hope my grandkids will help by sticking around and not letting these chewy bars tempt me! The bars will stay nice and fresh in a tightly covered container for almost a week!
The terrific thing about these sugar cookie bars is that you can change them for any holiday by changing the sprinkles or tinting the buttercream!
How fun for Christmas, Valentine’s Day, Saint Patrick’s Day, or the Fourth of July! They are quick and easy to make with very basic ingredients!
Preheat your oven to 350 degrees and line a square baking pan with parchment paper.
Cream together a stick of butter and a cup of sugar until it’s fluffy, then beat in an egg and a teaspoon of vanilla. A touch of salt is always a good thing in a sweet cookie, so use salted butter or add a scant teaspoon of salt if you’re using unsalted butter.
This dough is thick, so I found my trusty Danish whisk the perfect tool! Stir in the flour and baking powder until no flour is showing. Finally, stir in the sprinkles before pressing the dough into the pan.

Pat the dough into place using your hands or the back of a spoon to ensure it is as evenly distributed and level as possible. Bake for about twenty minutes or until the top is light golden brown.
You can use an eight-inch or nine-inch square pan. If you use the smaller pan, the bars will be a little thicker, and you may need to bake a wee bit longer. Remove the pan from the oven and set it on a cooling rack until it is easy to handle.
Lift the cookie bar from the pan onto the rack and let it cool completely before frosting it. While it’s cooling, mix all the frosting ingredients until fluffy. Spread the frosting on the cooled cookie bar and add sprinkles as desired.

Cut the bar into one-inch-wide strips, then divide it into thirds to make a cookie bar about one inch by three inches long. These bars are a fun treat any time, and because they are sweet, rich spring cookies, smaller pieces are ideal.

I used the sweetest springy pastel sprinkles I could find, and I think they look adorable! You could also tint the buttercream icing with food coloring to make any pastel shade you want! I chose a pale yellow color for my buttercream, and I think these spring cookies will be so pretty on our dessert table!

Do I need to peel the cucumbers?
It depends on the type. Thin-skinned cucumbers (like English or garden cucumbers) don’t need peeling. If you’re using thicker-skinned cucumbers, peeling can give a more tender bite.
