I don't usually use the words stupid or crazy, but this pineapple dump cake is "stupid simple": four ingredients and five minutes of crazy-easy.
My grandkids were forbidden to use the word stupid in their home, so please don't tell them I just did.
This is a recipe anyone can make, and everyone should. Nothing this easy should taste this good, but it really does!
It all started with a way-overdue look through my cupboards for things I overbought. I found multiple cans of sweetened condensed milk, pumpkin, evaporated milk, and crushed pineapple. Clearly, I had intentions that did not come to pass.
I adore my sister-in-law Carol and always wish she lived next door. Maybe she could straighten me out. After years of using it in her work, she is a whiz at Excel. She has her entire pantry and freezer contents on a spreadsheet she keeps current!!! Fact!
Seriously, with a few keystrokes, she has her grocery list printed and can shop in nothing flat. I greatly admire her organizational skills and discipline! More than once, I have reached out to her to resend a recipe I lost. She has those equally well-organized, so I have it in three minutes or less.
She could be super snooty about her organizational wizardry, but she is the most down-to-earth, fun person who's always ready to try something new. I don't think my brother knows just how lucky he is!!
You're right; I had too many cans of crushed pineapple on hand! I always keep cake mixes on the shelf to bake something fast if the church calls or there's a funeral. I buy them on sale.
This is one tiny area of my pantry where I actually do manage to maintain some order, and that's only because my old kitchen cabinetry is a challenge.
As I put cake mixes on the shelf, I mark the flavor and the expiration date on the box so I can use the older ones first. By the way, that's an old picture! 😉 New ones have taken their place!
Spray or grease a nine-by-thirteen pan and dump two 20-ounce cans of pineapple on the bottom. If you have pineapple chunks or tidbits, you can use one of them instead of the crushed pineapple. I love this David Burke non-stick cake pan!
Next, sprinkle a 15.25-ounce box of yellow cake mix as evenly as possible over the pineapple. I found this easiest to do with my fingers. You can also use a white or vanilla cake mix if that's what you have in the cupboard!
Next, sprinkle one-half cup of brown sugar evenly over the dry cake mix.
Finally, melt two sticks of butter in the microwave. I've found a way to do this with very little mess. Remove the wrapper from one end of the sticks and put them in a glass measuring cup with the unwrapped end down.
Then, put a damp napkin or paper towel on the cup and microwave in 30-second bursts until melted.
When you remove the napkin and wrappers, you can drizzle the butter right on top of the pineapple dump cake—it's as slick as a whistle!
Ta-da! This beauty is ready to bake in a 350-degree oven for about fifty to fifty-five minutes. The top of the cake should be golden brown when done.
Let it cool on a rack for a while before scooping vanilla ice cream on top of your amazing pineapple dump cake. When the ice cream melts into the buttery, crisp top, it's heaven in a bowl!
Refrigerate leftovers, but for maximum enjoyment, let the cake come to room temperature or warm slightly before adding toppings!
A pineapple dump cake dessert so fast you won't believe it! Nothing this easy should taste this good, but it does!
You can substitute pineapple chunks or tidbits for one can of fruit. You can substitute a white or vanilla cake mix.
Here are a couple of other ideas for that extra can of crushed pineapple or any cherry or apple pie filling lurking in the back of the cupboard! Yummy pistachio fluff, cherry dump cake, or mini apple pies!

This sounds great. I make something similar. In place of the second can of pineapple, I use a can of cherry pie filling. In place of the brown sugar, I use 3/4 cup chopped pecans. Delicious!
