Fasten Your Seatbelt! "The Holidays" are Upon Us!

It's the hap-hap-happiest time of the year, right? So why are we all so exhausted? And why is everyone so hungry? Wouldn't it be great to pull a rabbit out of your hat about now? How about if you could pull a sandwich out of the freezer and in a matter of minutes have it gooey, hot and ready?  Well, you can do it and here's the easy recipe.

Years ago I did a little work for a gal who told me about these little marvels. She called them "Andy's Sandwiches" because every time her grandson came home from college he'd root around in the freezer for some of these tasty bunwiches. Recently, I ran into her daughter-in-law who is now a PEO sister. I confessed I'd lost the recipe and by the time I got home the neatly typed recipe was waiting for me in my inbox! I was thrilled!

Here's the recipe for your enjoyment. I did try it with smoked turkey because I have friends who do not eat pork and they turned out great too! My advice? Hang onto this recipe because you're going to want to make it again and again!

Let's Get off to a "Grate" Start with a block of Swiss Cheese!

Now add the rest of the filling ingredients

Next,  spoon the filling onto split buns

Top with ham or turkey

Put the lid on them

Wrap in foil

Pop in the oven and enjoy!!

Do-Ahead Busy Day Oven Bunwiches

These go right from freezer to oven and get ooey-gooey hot and tasty quickly! Keep some on hand for your crazy, busy days!

  • 24 buns split
  • 1 1/2 lbs swiss cheese (grated)
  • 1 cup real mayonnaise
  • 3 Tbsp prepared yellow mustard
  • 2 tbsp poppyseed
  • 3 green onions, tops and all (chopped)
  • 1 Tbsp Worchestershire sauce
  • 1/2 lbs shaved smoked turkey or ham
  1. Mix cheese, mayo, mustard, onions, poppyseed and Worchestershire together and blend well. Put about a tablespoon on each bun, Top with meat, wrap tightly in foil and freeze or bake in 300 degree oven for 20 minutes. From freezer to oven, allow about 5 minutes extra.
