I had heard people talk about Boat Dip and honestly thought it was probably one of those recipes everyone else loved, but I'd probably skip. I just didn't understand what all the hype was all about. It went viral? Why?
Then I made it.
Oh my goodness! 😋 Where had I been? Living under a rock?
Four simple ingredients somehow turn into a creamy, cheesy dip that's completely addictive. I still can't explain the magic, but I can tell you this—I won't be showing up to another gathering without it.
All you need is sour cream, taco seasoning, well-drained Rotel, and freshly shredded cheddar cheese. Stir everything together, chill it if you have time, and serve with sturdy tortilla chips or fresh vegetables.
If you're feeding a bunch, you might want to make a double batch. Around here, it disappears in a hurry.

One of the best things about this boat dip is that every ingredient is easy to find in almost any grocery store- even maybe at the marina!
Sour cream – The creamy base that holds everything together.
Rotel tomatoes with green chiles – Be sure to drain them well so the dip stays thick and scoopable.
Taco seasoning – Adds all the flavor you need without measuring a dozen spices. (I buy mine in bulk- that way I can adjust it to taste, and besides that, it costs less!)
Sharp cheddar cheese – Freshly shredded melts into the dip much better than packaged shredded cheese.

If you are the one planning the party, serve this dip and consider adding these favorites:
Sloppy Joes - A classic sloppy joe recipe chock full of veggies in a slightly sweet, tangy sauce.
Grandma-Style Potato Salad - Creamy, old-fashioned potato salad with tender potatoes, eggs, and a tangy homemade dressing. The kind everyone grabs first at the picnic table.
Coleslaw Pasta - A light, crunchy pasta salad crammed with fresh veggies. It's a great recipe for potlucks and other large gatherings.
Mexican Chocolate Sheet Cake - This is a recipe for a super-moist half-sheet Mexican sheet cake spiced with cinnamon and topped with pecan-studded pour-on chocolate icing. It's a big one and serves a bunch, great for brownie sundaes!
A very simple combination of ingredients quickly combines to make a dip that is amazing, delicious, and hard to stop eating!

Can I make Boat Dip in advance?
Absolutely. In fact, I think it's even better after chilling for a few hours.
How long will it keep?
About 3–4 days in the refrigerator in an airtight container.
Can I freeze Boat Dip?
I don't recommend it. Sour cream doesn't thaw with the same creamy texture.
Can I make it less spicy?
Use mild Rotel and a mild taco seasoning.
Can I use Greek yogurt?
Yes. Plain Greek yogurt can replace part or all of the sour cream if you'd like a tangier, higher-protein version.
