
Here's a salad you can whip up quickly on a hot day when cooking is the last thing you want to do. It's fancy enough for guests, perfect for a potluck, and it tastes delicious! Interested?
A while back, I took a little road trip to spend a day with an old friend. She is an amazing artist and incredibly efficient. Lunchtime rolled around before we knew it. She rummaged through the fridge, and in 10 minutes flat, with five ingredients, she pulled together this healthy, delicious slaw that was so good I couldn't stop eating it.

Wait? Broccoli slaw? In a bag? And everything is already shredded for me? And it's in plain sight, right in the produce section? I'm embarrassed to admit it, but I had never, ever noticed it. What a mistake! I am so happy I finally found it!!
I need to learn some tricks from my friends who love to eat but do not share my love of spending time in the kitchen! I have always been a pretty good "scratch" cook. Quick is good, but sometimes quicker is even better, especially when it tastes this good!
Pre-packaged broccoli slaw is simply amazing! It's all washed and ready to use. It contains shredded carrots and red cabbage for added color, flavor, and nutrition. I call it magic! There's no waste and no mess. It's a very versatile little bag of goodies, and it keeps very well in the refrigerator.
Serve this broccoli slaw with these, and you have a great lunch spread!
Two-Ingredient Mini Apple Pies

Normally, I avoid the "convenience" section of the produce department. You know, where everything is all washed, cut, and ready to go. I've always been hyper-budget-conscious!
I always grate my carrots and shred my cabbage by hand. But, seriously, I finally realized there are times when that's not necessary! You CAN teach an old dog new tricks, and my tail is wagging!!
This broccoli slaw probably takes less than 10 minutes to put together without breaking a sweat! Here's how! Peel and chop about 1/2 cup of cucumber.

Peel and chop about 1/2 cup of red onion. I used my Pampered Chef food chopper to chop them both a little bit finer.

Dump the whole bag of slaw, the onion, and the cucumber in a bowl. Mix it all up. Pour a jar of chunky bleu cheese dressing from the refrigerated section over everything and toss it together.

You can serve this immediately, but it's even better the next day when all the flavors get to know each other better. Garnish with roasted salted pepitas!
The crunchy, salty bits kick everything up a notch, and the result is pure broccoli bliss. Pepitas are a nutritional powerhouse, too, so add them liberally and enjoy them in this incredibly yummy salad!

This slaw would be a perfect topping for pulled pork sandwiches. Use your imagination and think of other things you might have on hand for add-ins! How about some dried cranberries or cherries? Sweet, crunchy red grapes would also taste amazing! How could you possibly go wrong by adding some crisp bacon bits?
Bleu cheese is terrific with broccoli slaw, but you may feel free to try other dressings like poppy seed or ranch. Even if you are not sure about bleu cheese, try it! The flavors were made for each other!
Our women friends are important. Studies show women with a circle of close women friends are happier, live longer, and recover more quickly from illnesses or injuries. It is worth the time to nurture those important relationships because they are essential to our well-being.💝
